Vineyard: Grapes come from the surrounding region of La Motte en Provence, consisting primarily of Grenache and Rolle (Vermentino).
Vinification: Harvesting at sunrise to noon. The grapes that are used to make Rock Angel are sorted optically. Destemming and slight crushing at 7-8°C to avoid oxidation. Free run juice and first slight pressing. No maceration. Both free run juice and pressed juice vinified partially in demi-muids (600lt barrels) and stainless steel, both temperature controlled.
Characteristics: Pale salmon color. The aromatic profile of the nose consists of small red fruits like strawberry and redcurrant and is completed by notes of jasmine. On the palate, that is in accordance with the nose, there is also a smooth touch of pepper. The wine is light-bodied, shows an oily texture and is refreshed by the crispy acidity.
Paired with: Seafood, salads and as an aperitif.
Served at: 8-10°C.
