Vineyards: Grapes from selected vineyards in Santorini that have volcanic and sandy soils.
Vinification: Typical white vinification where the maturing process takes place in oak barrels and constant stirring of the lees.
Characteristics: Shiny yellow color, complex aromas from the barrel( wood, hazelnuts, smoke, vanilla) that blend in with the aromas of the assyrtiko grape( apple and peach). Rich, oily and round with an exceptional structure, metallicity and intense aromatic aftertaste.
Paired with: Shellfish and grilled fish, grilled shrimps, salmon with spicy sauces, risotto with strawberries and shrimps. Tandoori chicken, Pork with fava beans and tomatoes. Smoky cheese such as metsovone.

Aging: 7-10 years.
