Vineyard: In the Ay valley and Côte des Blancs, on premier cru vineyards in Dizy and Cumières and on the slopes south of Epernay. The soils are porous, calcareous, clayey and well drained.
Vinification: traditional method (Methode Champenoise).
Characteristics: Medium salmon colour and creamy sparkle. Bouquet of aromas that evolves continuously, full of blackberries, gooseberries, strawberries, pink grapefruit, citrus peel. Balanced, with an exposed freshness - crispness at the beginning. The tangerine, strawberry and raspberry fruits immediately impact with hints of nuts and toast. Lovely finish that invites for the next glass.
Pairs with: lobster, salmon, soft cheeses, but also with dried fruit (fig, peach, plum).
Enjoy at: 8°C.
Ageing: no ageing required. Enjoy within the next 2-3 years.
Varietal composition: 50% Pinot Meunier, 30% Chardonnay, 20% Pinot Noir.
