PRODUCTION The Chardonnay grapes, picked at proper ripeness levels, were immediately pressed in the cellars. After this soft pressing, the must was chilled and remained at a temperature of 50° Fahrenheit (10° centigrade) for 24hours to favor a natural static settling of the impurities. The clean and clarified must was fermented with selected yeasts in temperature-controlled stainless steel tanks at a temperature of 61° Fahrenheit (16° centigrade) in order to fully bring out the aromatic patrimony of the grapes. The following phase, that of the aging of the wine before bottling, took place entirely in stainless steel tanks.
