Vineyard: The vineyards of Naoussa are located on the sunny south-east slopes of Mount Vermio, protected from the cold northern winds. The abundant rainfall and the relatively cool climate play a beneficial role in the development and fruit-bearing of the vines. The soils are marl, clay loam, calcium-rich and therefore ideal for producing wines with a rich body.
Vinification: The grapes are picked by hand and placed in cold rooms at a very low temperature to maintain the delicate aromatic characteristics. After light pressing, where we keep a small percentage of whole bunch, the grapes are led to a pneumatic press for 12 hours of cold maceration. The fermentation temperature is maintained at a very low temperature and remains minimum time on wine lees.
Tasting Notes: Bright, crystal, soft lime-green color. Fresh aromatic character reminiscent of lemon and citrus fruit with intense notes of peach and grapefruit. Refreshing with crisp acidity and natural minerality, perfectly balanced, full-bodied wine with a long aromatic aftertaste and notes of spicy pepper.
Enjoy it at: 8-10 °C
Paired With: Ideal with fish and seafood aromatic herbs, grilled vegetables, fresh salads with aromatic herbs and prosciutto, a cheese variety and fresh fruits.
