Vineyard: Self-rooted basket-shaped vines (kouloures) from Emporio, Fira, Kamari and Karterados.

Varietal Composition: Athiri, Aidani, Assyrtiko

Vinification: Spontaneous fermentation with indigenous yeasts, remaining on the fine wine lees.

Tasting Notes: Aromas of lemon & lime in a mineral character. On the palate the wine is dry, with refreshing acidity and a salty aftertaste.

Paired With: Seafood, fried or grilled fish, lobster pasta

Served at: 10-12°C.
