
Vineyard: Located on gravelly soil, the stones of which retain the heat of the sun, helping the grapes to ripen faster.
The thin soil retains very little water, leading to low yields.
It gathers the characteristics of the grape and "forces" the vine to look for food at great depth. The relationship of wine with terroir is even stronger because of this and is expressed in wine with strong minerality.
Winemaking: There is a long pressure from which the rich must is produced, which will be vinified. Fermentation takes place in oak barrels. Absolute control of fermentation, barrel - barrel, means that the aromas produced from these precious grapes are kept intact.
Maturation takes place in oak barrels and lasts from 18–24 months. During the blending, there is a strict selection of the best wine. In years when the crop has not reached the required level of quality, the grand vin will not be bottled.
Tasting notes: Clear, medium amber with golden highlights. Intense and concentrated nose characterized by aromas of tropical fruits, nuts and candied citrus fruits, sweet spices and honeycomb. The mouth is full of high refreshing acidity, with mineral and herbal aromas complementing those of the nose, creating a complex and extremely balanced wine. The aftertaste is long and fruity.
Paired with: Fruit tarts, sweets with white creams, fruit salads, mature cheeses or foie gras.
Served at: 7ºC – 9ºC.
Aging: Susceptible to long aging.
