Vineyard: The vineyard is located at Litochoro, at Topoliani area, in the region of Pieria in Northern Greece. 16 hectares up to 400 meters altitude, on the slopes of Mt Olympus.
Vinification: Grape sorting on a vibrating conveyor belt table. Pre-fermentation cold maceration for a few days. Fermentation in stainless steel tanks. Maturation for 12 months in a combination of French oak barrels (2/3 of the quantity) and concrete tulip-shaped vats (1/3). Unfiltered.
Tasting Notes: Bright burgundy color. On the nose, the red fruit -raspberry, plum, wild cherry- is tagged along by notes of tomato and olive, as well as subtle floral hints and spices. Medium body, elegant palate with crisp acidity and noticeable yet fine grained tannins. Long, layered finish.
Paired with: Perfect match with juicy red barbecued meats, spicy sausages, red baked peppers in olive oil, stew rabbit, light spicy fool body cheeses.
Served at: 16-18°C.
