
When the great Giorgos Skouras decided to make a premium rosé wine he studied everything very carefully. Peplo is made from 3 different varieties (Agiorgitiko,Syrah,Mavrofilero) in equal quantities, matured and fermented in 3 different types of 'containers' and this union gives an impressive complexity. A detail in the vinification of Mavrofilero also baptised the wine, as the skins are put in fabrics,that in greek are called ‘peplo’, to extract the colour and aromas inside the amphorae.
Vineyard: The grapes of all varieties come from an altitude of over 600 metres. Specifically, Agiorgitiko comes from vineyards in mountainous Corinthia at an altitude of 850 m, Syrah comes from Argolida at an altitude of 600 m and Mavrofileiro from Mantineia at an altitude of 650 m.
Vinification: Each variety is vinified separately, Agiorgitiko in acacia barrels without maceration, Syrah is matured on its lees in stainless steel tanks, while Mavrofilero undergoes a long maceration of 4 months in clay amphorae with its skin.
Characteristics: The colour is bright and fine, the ultimate coral with red gold highlights.The nose is dominated by red fruits, cherry, strawberry, but also citrus, grapefruit with a hint of lemon, white flowers, honey, a little bit of violet and a hint of minerality. The palate confirms the aromas of the nose complemented by a sense of sweet vanilla, acacia and clay. We, therefore, have a refreshing acidity with a rich buttery aftertaste along with some minerality.
Combine with: fresh salads, pizzas, fish and seafood, pasta with light red sauces, sushi and cheese pies.
