Terroir The vineyards dominate the hills, facing the sea, clinging to terraced in terraces up to 300m above sea level, on the slopes forming a vast amphitheater sheltered from the mistral. The high altitude of the vineyards favors cool nights and slow ripening of the grapes. The vineyards of Castle Pibarnon are planted on old Triassic soil, characterized by very high rates of limestone. This limestone promotes the appearance of clumps in wines, and allows the extraction of very fine and elegant tannins. Moreover it is causing the freshness and minerality, giving an exemplary race and flavor. Winemaking As in the vines, fermentation time asked a lot of patience, tannins are extracted slowly after long days of maceration and punching. Fermentation is followed by a very LONG CUVAISON (about three weeks) before running off. BREEDING in oak casks for 20 months. The wrath of the park will soon be renewed at 100%. Diversification in the choice of coopers and casks of different ages can adapt the best breeding of each of our terroirs.
It is a structured, built, long guard vintage. Its volume and mass indicate high amplitude and fade in the final to leave the palace smoothness, sweetness and fruity tannins. The tasting shows the success of the selection area: maturity at all costs, for extraction of tannins and minerality.
