
Vineyard: The privately owned Boutari vineyard lies at an altitude between 170 meters and 215 meters, on a 7 hectare. The site of the vineyard was very carefully selected on the north side of the hill in order to protect the vines from ‘’Livas’’ the warm southern wind , while at the same time allowing the cool winds ‘meltemia’ of the Cretan sea. The soil type is clay, limestone, with good drainage.
Vinification: The grapes are late harvested and then sundried for 7 days which results in the dehydration of the berries and therefore increase in sugar concentration. The clusters are then crashed and pressed and the resulting juice is transferred in stainless steel tanks for the alcoholic fermentation. The fermentation has a very slow pace and in the last stages is naturally arrested resulting in a naturally sweet wine with high alcohol content. After ageing in French oak barrels for 24 months, the wine is filtered and bottled.
Tasting Notes: Golden colour with dark yellow hue. Impressive complex bouquet on the nose where varietal aromas blend with ageing aromas. Citrus fruit, pineapple and grapefruit combine with aromas of honey and chamomile. Rich texture, full-bodied with a long lingering warm aftertaste.
Paired with: Served very pleasantly chilled as an aperitif; it can accompany sweet citrus and sweet cheese pies.
Served at: 7-10°C.
Aging potential: Suitable for extended cellaring.
