Vineyard: Matsa estate has a total area of 122 acres. The warm and dry climate of Attica is characterized by mild winters and high temperatures, favoring the organic cultivation of Savvatiano.
Vinification: Harvesting was done manually at the lowest possible temperatures of the day. Upon reception, the grapes were hand-sorted. Typical white vinification followed with a small pre-fermentation extraction. Alcoholic fermentation was performed under controlled temperature using selected yeast strains. The wine matured in stainless steel vats with lees stirring after the end of the fermentation until the bottling.
Tasting Notes: Characteristics: Lemon green color, on the nose aromas of pear, yellow fruit, louiza and soft floral notes. Staying with the lees during maturation, gave wine a mild oily sense in the mouth, which balances with the refreshing acidity.
Paired with: Salads, grilled vegetables, white meat, fish and seafood.

Aging: Savvatiano has excellent aging potential and evolves very nicely over time.
