Vineyard: Mantinia. Moschofilero grape variety from 47 years old vineyards with clay soil.
Vinification: S lection of estate grown Moschofilero grapes from 47 year old vines from the Boutari vineyard in Mantinia. Evaluation of analytical and berry sensory data to assess the right time to harvest. Specific harvest plan for each plot. Careful hand picking in the vineyard on the coolest times of the day. Cooling of incoming grapes at 10C followed by hand sorting in the winery. White wine vinification scheme with 6 hours of skin contact. Temperature controlled alcoholic fermentation at 12-18 °C. Maturation on the fine lees for 3 months, gentle filtering and bottling.
Tasting notes: Soft white with pale grey notes. Intriguingly aromatic profile combining characters such as jasmine, pear, pineapple and citrus fruit with notes of mint and honeycomb. Refreshing,crisp, full bodied and perfectly balanced with a fruity long-lasting aftertaste.
Paired with: Aromatic salads, grilled fatty fish, shell fish, cheese or fruit platters.
Served at: 10-12 °C.
