Vineyard: Bramito comes from the vines surrounding the medieval castle Castello della Sala. Chardonnay is a variety that particularly thrives in this terroir. The vineyards are located in fossil rich soils with bands of clay that give the wine minerality and elegance.

Castello della Sala

The famous Castello della Sala is located in the region of Umbria, near the border with Tuscany. It is the ideal place for the cultivation of white varieties. The vines are grown in clay and limestone soils rich in fossilized shells and are well exposed to the sunrise with an excellent temperature difference between day and night.

Vinification: The grapes are transported to the winery, followed by destemming and gentle crushing. The must and skins are cooled at a temperature of 10 °C for a short maceration period of about 2-4 hours in order to enhance the flavours and bring out the aromatic profile of the variety. After clarification in stainless steel tanks, some batches of must are transferred to oak barrels for alcoholic and malolactic fermentation. Finally, the wine is blended and bottled. 

Tasting Notes: Straw yellow colour on the sight. The nose starts with aromas of white flower blossoms followed by light hints of citrus. On the palate it is crisp, full-bodied. Its mineral character accentuates a pleasantly savoury finish.

Paired with: White meats, mature cheeses, fatty grilled fish

Enjoy it at: 10-12°C.
