Vineyard: Rizes, Arcadia. Vineyard at an altitude of 750 meters.
Winemaking: Collection of fruits at the maximum maturity, followed by maceration. No preservatives are added. The alcoholic fermentation is spontaneous followed by malolactic fermentation. The extraction lasts about 20 days, while the fermentation progresses and the young wine is led to amphorae of 400 and 500 liters, where it remains and matures for 6 months. The wine is bottled unfiltered without any intervention or addition.
Characteristics: Bold reddish color, aromatic intensity with dominant pomegranate, truffle, green pepper, sweet grape, dried figs, hints of wax and basil. Strict in the mouth, with noticeable tannins and a wealth of dried flowers and herbs. Aftertaste with intensity and duration.
Combines with: Grilled vegetables, lamb cooked in casserole, cheeses such as halloumi and manchego.
