
Vineyard: Mount Athos wines belong to "Protected Geographical Indication Mount Athos".
One of the most special features of the Mount Athos vineyard is the isolation of the area, which is surrounded by dense forest and sea. Only traditional agricultural practices are applied throughout the peninsula, making Mount Athos one of the most essential examples of organic farming.
The vineyard of Tsantali estate on Mount Athos has a total area of 70 ha of certified organic farming, SE orientation and is located at 200-300 meters altitude.
Vinification: Cold maceration takes place before fermentation at 10-12°C for 48 hours, followed by alcoholic fermentation in stainless steel tanks at 22°C for 12 days.
During the fermentation,the must is pumped over in order to obtain the best extraction of tannins and anthocyanins from the marc. Finally, malolactic fermentation follows in the tank.
The wine ages for 10 months in 300lt french oak barrels and then for 6 months in the bottle before being released to the market.
Tasting Notes: Deep ruby red color. The nose is vibrant with aromas of ripe red berries and spicy notes. Rich on the palate with robust tannings leading to a long, lingering finish.
Paired with: Meat with red sauce, game, aged cheeses.
Served at: 16-18°C.
