Vineyard: PGI Macedonia - Vineyard at an altitude of 100 metres, in stony soil rich in organic matter
Vinification: Grape sorting on a vibrating conveyor belt table. Fermentation starts in stainless steel tanks and before its completion 1/3 is transferred to French oak barrels, 1/3 in tulip-shaped concrete vats, while the rest remains in the tanks. The wine stays for 6 months on fine lees. Blending of the 3 parts.
Tasting Notes: The result of blending the 3 different Chardonnay vinifications is concentration and complexity that combines fruity aromas -green apple, citrus, stone fruits- with those of butter, cream, and toast. The bright acidity balances the layers of flavors and the oily, rounded palate. Well-integrated oak. Long finish. Ageing potential.
Paired With: Grilled fish, poultry with white sauces, risotto with mushrooms
