Vinyard: At the Uco valley of Mendoza and in an altitude of 1.100 meters above sea level, is located the old vineyard of Lote Negro.
Vinification: The grapes after the harvest remain in cold condition up to 10ºC for 5 to 8 days, in order to extract better color and more intense fruit characteristics. The fermentation takes up to 7 days in 28ºC and then for another 25-30 days in a constant temperature of 22ºC. Following that, the malolactic fermentation takes place in the 100% of the wine and after that the wine matures for 16 months in new french oak barrels and 12 more months in the bottle.
Characteristics: Intense aromas of blackberry and rapsberry which blend harmonically with a spicy taste and mint. Well structured with full aftertaste.
Paired with: Red meat, grilled sausages, cheese, pasta with spicy sauce.
Served at: 14-16ºC.
Aging: 10 years.
Cellier notes: Let it breath in a big glass or a carafe, and its character will surprise you. With time it will be friendlier and it will unfold its full aromatic characteristics.
