Poli Pauillac is a distillery derived from the distillation of the Cabernet Sauvignon, Merlot and Petit Verdot grape marc of the most famous Chateau in Pauillac (Medoc), France. The story begins on June 13, 1995 when Jacopo Poli visits the imposing Château Premier Cru in the Pauillac region and dreams of distilling his own grape marc. In 2007 he managed to get the grape marc from the winery. The distillate remains for 6 months in stainless steel tanks and matures in 11 different drums produced in the Château and eventually 2016 bottling.
