Vineyard: Protected Geographical Indication (PGI) Mount Athos
Varietal composition: Limnio (40%) & Cabernet Sauvignon (60%)
Vinification: Traditional red vinification in open vats and skin maceration at low temperature for 48 hours. Fermentation in stainless steel tanks at 22°C for 12 days. Malolactic fermentation in well-toasted small oak barrels follows the fermentation. Maturation for 8 months in 300 Lt French oak. Ageing: 6 months in the bottle before release.
Tasting Notes: A wine with ruby red color of medium intensity. The nose offers a lovely array of red cherries, fresh herbs and spicy oaky aromas. The palate is round and velvety. Medium finish.
Paired With: Grilled meat, roasted vegetables, hard cheese and charcuterie
