
The famous wines of antiquity, mentioned in many texts of that time, were the ancestors of today's wines, which come from the now legislated Designation of Origin "Slopes of Meliton" of Superior Quality. The idea of reviving this area was born around 1965 by Yannis Karras, who decided to exploit all the potential of this precious gift that nature has generously offered to the unique slopes of Meliton.
Vinification: The harvesting of Limnio is done in mid-September, from the oldest vines of the estate and with sorting of the highest quality grapes. In the winery the handling of the grapes is careful and fast, so that the juice is produced before the colour of the skin passes. Pre-fermentative maceration at low temperature. Vinification in stainless steel tanks using selected yeasts at temperatures up to 15 degrees Celsius. Remaining with the lees and maturing for 6 months in French oak barrels with periodic stirring of the lees, a process that improves the character of the variety.
Varietal Composition: 100% Limnio
Tasting Notes: Bright straw colour, delicate aromas of citrus, honeyed fruit, nuts and lemon cream. Typically crisp on the palate with lemony acidity and mineral character.
Paired with: Fresh seafood, shellfish, fatty grilled fish, long-ripened yellow cheeses.
