Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when fruit was directed to other wines), nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia’s finest Cabernets. 100% Cabernet Sauvignon.
Vineyard: Region Adelaide Hills, Barossa Valley, Wrattonbully, Coonawarra.
Maturation: 16 months in 100% new American oak hogsheads.
Tasting notes: Colour: Deep dark core, purple edge retained in February 2012. Nose: Instantly recognisable—unabashed and unmistakably 707—no pretence, no mistaking. Dark berry coulis, spiced dates and pecan-shortcrust aromas hover above. Suggestive notes of ironstone, ferrous assortments and soy simmer below. Irrationally, but a silhouette of nutty, chocolate/malty oak...Palate: Full-bodied, rich and even. Varietal fruits have a role, but not a major part of this flavoursome production. Texturally, more muscular, defined and assertive, than mouth-coating or viscous. Prominent tannins are firm, ripe and malleable. Creamy/nougat oak in no way shying away—contentedly at one with the blend.

Penfolds is steeped in a unique culture handed down by generations of winemakers. It all began in 1844 with Dr Christopher and Mary Penfold, who established a vineyard at Magill Estate near Adelaide. There are three historic eras of winemaking; the colonial, the empire, the dynastic periods. The first Penfolds wines were made from newly established vineyards around Adelaide and made for the enjoyment and health of South Australia's first settlers. Between 1900-1945, Penfolds expanded its vineyards and became a household name across Australia. It exported table and fortified wines to the British Empire and it's outposts.

After a visit to France in 1950 Penfolds Chief Winemaker Max Schubert dreamed of making wines that would capture the imagination of wine drinkers all over the world. The birth of the iconic Penfolds Grange in 1951 led to a remarkable dynasty of wines that would bring Penfolds wines worldwide recognition for their signature style, consistency and longevity.

Penfolds winemaking and superb range of wines have been steadily refined and improved upon with each of Max Schubert's successors. Don Ditter, John Duval and current Chief Winemaker Peter Gago have been the custodians of a rich wine making tradition that goes back for over 170 years.
