Vineyard: AOP Languedoc
Vinification: The various grape varieties Syrah, Cinsault, Mourvèdre, Grenache, that come from the best terroirs in Languedoc, are harvested separately when each of them is just at the right ripeness level. The grapes are de-stemmed, cooled down to 47°F and transferred to the press to extract the rosé wine must. Fermentation lasts between 15 and over 30 days. Finally, after light fining, the wine is bottled quite early to preserve the fresh, fruity character of the wines.
Tasting Notes: This dry salmon pink colored wine features medium floral, fruity and mineral scents. On the palate intense red fruit, citrus fruit and spices offer a balanced and slender texture. Fresh and lively with distinctive minerality and long-lasting finish, intensified by aging in French oak barrels.
