This Amontillado Sherry is fermented in oakwood caks.The ´must´or grape juice originates from our vineyard in the renowned Macharnudo area of Jerez, and is aged under a veil of ´flor´ for more than eight years. Further maturing, allowing oxidation of the wine, takes place for at least another eight years before bottling.

Product description
Variety: Palomino fino. Vineyard: Macharnudo Alto. 25 year old vines. Soil: Albariza, chalky white colour, clayey texture and high in calcium carbonate. 
Production: Grape harvest by hand. Fermentation of must in American oak barrels and further kept under a veil of yeast (flor) between 2 and 3 months. This wine is then fortified to 15.5º and classified as ‘sobretabla’ (pre level prior to the last Criadera) for one year, before being drawn to the youngest Criadera. A limited selected volume is drawn from the Solera of Inocente Fino and further fortified to 18º to exhaust the “flor” and poured into the last Criadera of this Amontillado. Type of ageing: Biological (under yeast) + Oxidative Ageing levels: 10 Criaderas + 1 Solera Extractions x Year: 1, Winter Average age: Over 16 years old (10 biological + 6 oxidative) Alcohol: 18 % vol. 
Tasting: Medium amber with bright intensity. Clear reminiscence of its biological ageing under veil of yeast, dry fruits (hazelnut), with an elegant touch of toffee and butter scotch. Very dry, slight tangy palate with and intense well-balanced acidity.
Enjoy: As aperitif and accompanying soups, smoked fish, cured meats, delicious with anchovies and perfect match with artichokes and green asparagus.
