Vinification: Cold fermentation fo 4 days under controlled temperatures and then fermentation with the skins under controlled temperatures. Total length 25 days.
Tasting Notes: Deep ruby in appearance. Ripe cherry and raspberry flavors flood the mouth. Layered notes of leather and black pepper add spiciness to the palate. Lush tannins and balanced acidity provide a solid stucture. Warm and lengthy finish. A Syrah not a far from the classics but still a highly individual one. Subtle, yet expressive, nose of ripe raspberry with pine, chocolate, black pepper and sweet spice. On the palate, fruit with tart flavors of ripe red fruits and plum over a rocky minerality. Made for ageing.
Paired with: Red meats.
