Vineyard:  The grapes come from Gaia's private vineyard at the semi-mountainous commune Koutsi in Nemea, at an altitude of 450-550m with an intense slope 15% and N-SW direction. This vineyard is pruned very strictly in order to reduce its high fertile buds.

Vinification:  Classic red vinification. ‘‘S’’ ages for 12 months in 225 lit. French oak barrels coming from the Nevers and Allier forests in central France. When bottled, without undergoing any filtering or additional procedures, it matures for at least five months before being released to the market.

Tasting Notes: Deep red color with violet hues. It is characterized by a rich bouquet of aromas consisting of blackberries, cherries, chocolate and sweet spices such as clove, cinnamon and vanilla that come from the contact with French oak barrels. The complex and dynamic palate in combination with the rich tannins, give the "S"  unique character and great aging potential.

Paired with: Grilled meat, lamb stew, sausages and hard cheeses.

Served at: 16-18°C.

Aging potential: 8-10 years.
