Greek distillers used to keep for them and their friends the "heart of the distillation" of ouzo or in other words, the purest part of the distilled spirit. "Adolo" is the expression traditionally to Greek distillers to describe "the heart of the distillation of ouzo". Adolo is a product of a triple distillation the last of which takes 13 hours in a very small handmade copper still, made in 1911. The outcome is an exceptional distillate which introduces a unique category of fine ouzo for all those who can recognise and appreciate quality.
