Le Limozin which is a fine example with wines that often boast more substance than a Premier Cru. As is often the case in Burgundy, the vineyard names often refer to a geographical feature. “Limozin” refers to a stream that once flowed alongside the vineyard.
Vinification and maturing: Harvest date: the grapes were handpicked on 20th September 2014 and collected in 20-kg perforated crates. At the winery: the whole bunches of grapes were gently pressed for 2½ hours. The temperature of the must was cooled to 12°C and was transferred directly into 450L-barrel without racking in order to keep most of its lees. Long fermentation (up to 10 months!) using indigenous yeasts. In the cellar: the wine was aged for 18 months without being racked or stirred to bring out all of its minerality. A proportion of 30% new French oak barrels that had been toasted at length at low temperatures to impart a very subtle, delicate touch of oak were used. Bottling: the wine was bentonite fined, very gently filtered before being gravity-bottled in March 2016.
Tasting notes: Visual: bright pale gold Nose: Intense aromas of yellow fruit, citrus zest and hazelnut. Palate: Good length, aromas of caramel appear in the middle of mouth while preserving the freshness of the wine.
Food and wine pairing: Beaufort cheese, scallops, Bresse chicken with cream.
Ageing potential: 7 to 10 years.
Serving suggestions: 14°C.
